In the first part of Mable Hoffman’s book Crockery Cookery, we learn all about what a slowcooker crock pot is — from how to buy one to how to clean it and more. Then we get into recipes. In the poultry section, we find recipes for turkey, from sweet and sour turkey wings, turkey loaf to stuffed turkey breast to cran-orange turkey roll to barbecued turkey legs. Almost sounds good enough to eat!
She tells us that vegetables often take longer to cook than some poultry, and one trick is to put the vegetables at the bottom of the crockpot underneath the chicken or turkey. Be sure to cover the vegetables with liquid as well.
She says turkey is very delicious slow cooked, and that turkey legs, thighs and wings cook well in the slow cooker. She says they become very juicy, tender and flavorful. A 4 1/2-quart or larger crockpot is recommended for larger turkey parts,. If we use a 3 1/2-quart crockpot, we need to use smaller turkey parts or remove the bones.
These recipes use a lot of the traditional no no’s of yesteryears — Worcestershire sauce, instant this and that, brown sugar…. but it will be easy enough to tweak these delicious-sounding recipes to make them healthy. And that we will do in the next blog!
